Oven Roasted Beets.

One of my favourite roasted veggies. It’s very easy to make, also delicious and nutritious. Oven roasting is the easiest way to cook beets. The skins will slip right off after cooking.  Serve these beets either as a side dish or a salad.  I like to put on my salad. It’s so good. Sprinkle some fresh ground peppers and serve with good goat cheese or feta cheese.

Ingredients:

  • 4,5 medium beets, washed and leaves trimmed
  • 2 stalks celery
  • 4,5 cloves garlic
  • 2,3 stalks green onions
  • 2 fresh rosemary
  • olive oil
  • freshly ground peppercorn or black pepper
  • pinch of sea salt

Directions:

  1. Preheat oven to 350 degrees F. Place the rack in the middle of the oven.
  2. Wash and scrub the whole beets to clean off any dirt. Trim off the stems (leafy tops) and ends of the beets.
  3. Coat beets lightly with oil. Add salt and pepper.
  4. Wrap beets in aluminum foil, place on a baking sheet, and roast in the oven until cooked through, approximately 45 to 60 minutes.20160425_191809
  5. Remove from the oven, let cool for 10 minutes, and then peel and slice into 1/4-inch thick slices.
  6. Beets are delicious on their own sprinkled with a little salt or as an accompaniment to your dinner. Some people like to serve them as an appetizer with good goat cheese or feta cheese. I like to put on my fresh green salad.
