Zuppa Toscana Italian Soup.

We love a good warm bowl of soup at our home. This one is one of our favourite soups. Full of flavour, comfort and all blended together for perfection. When we were in States we used to go to Olive Garden Italian restaurant and order unlimited soup with garlic sticks. They have the best soup ever.  After we moved to Canada, we missed this soup so much because of no Olive garden in here Canada. Then we decided to make this soup ourselves and enjoy my Olive garden anytime we want. I hope you will enjoy this too. It’s a very light and delicious soup. I would give 2 thumbs up.

Ingredients: (8-10 serving)

  • 1 lb mild Italian sausage
  • 4,5 tbsp red bell pepper (fine chopped)
  • 10 – 12 medium russet potatoes, 1/4 inch sliced
  • 1 large onion, chopped
  • 1 package bacon (I prefer fresh bacon and cook way I cooked, you can use bacon pieces too)
  • 5, 6 garlic cloves, minced
  • 1/4 bunch of kale chopped
  • 2 cubes of chicken bouillon
  • salt and pepper  to taste
  • pinch of Italian seasoning 
  • 1-quart water ( you can mix with chicken broth)
  • 1 cup heavy whipping cream

To Make: 

  1. Fry bacon in a frying pan. let it cool and chop.

2. Saute Italian sausage and crushed red pepper in a large pot. Drain excess fat, set aside while you prepare other ingredients.DSC_0003

3. In the same pan (do not wash after the sausage) saute bacon, onions and garlic over low-medium heat for approximately 6,7  minutes. DSC_0007DSC_0011

4. Add chicken bouillon, salt, pepper, Italian seasoning and water to the pot and heat until it starts to boil.

5. Add the sliced potatoes and cook until soft, about 20 minutes. (or you can fry your potatoes with onion and bacon just like me)DSC_0012

6. Now add the heavy cream and just cook until thoroughly heated.20774431_front_a01

7. Stir in the sausage and the kale, let all heat through and serve. Serve with garlic bread or sticks.DSC_0019DSC_0021
