Homemade Mushroom Chicken Noodle Soup

Chicken soup is a soup made from chicken simmered in water, usually with various other ingredients. The classic chicken soup consists of a clear broth often with pieces of chicken or vegetables, common additions are pasta, dumplings or grains such as rice and barley.  My kids like this kind of chicken soup with long hair noodles. This is so far my favourite soup now.

One different kind of version with sausage rose bun. Made this soup with potatoes and red pepper 😉

Ingredients:

  • 6 cups homemade chicken broth  (10 cups of water, 4 chicken legs or whole chicken and seasonings)
  • 1/3 cup white wine (optional )
  • 2 cups of cooked  chicken (4 chicken legs )
  • 2, 3  bay leaves
  • 1 stalk rosemary, (1 tsp dry rosemary )
  • 1 dried chilli red pepper
  • 2 chicken bouillon
  • 1 medium onion, chopped
  • 3 stalks celery, chopped
  • 1 large carrot (1 cup) chopped
  • 3 garlic cloves, minced
  • 2 tsp parsley, or cilantro
  • a half cup of chopped  mushroom or colourful peppers
  • Salt and pepper to taste
  • 1 tbsp butter
  • 1-2 tbsp flour
  • any noodle or rice you like
  • 1 lemon or lime zest

Directions:

  1. Remove all the excess fats from the 4 chicken legs rinse with cold water place them in a large pot. Cover them with 10 cups of water and put white wine and bay leaves, salt, pepper, chicken bouillon, dry red pepper and rosemary cook for 40 minutes to 1 hour. Once the stock is boiling, use a mesh strainer to remove any scum and impurities floating on the surface of the stock. 
  2. While the chicken cooks, rinse mushrooms, onion, carrot and slice them.
  3. When the chicken is done, remove it and chop it into bite-sized pieces or just shred. Sieve the chicken stock to get particle-free soup.

4. Now empty pot, melt the butter.   Add mushrooms, celery, carrots, mushrooms, garlic and cook, stirring often, until softened (5-7 minutes). Stir in flour, salt, and pepper and cook for 2 minutes, stirring constantly. Add the chicken broth and shredded chicken and stir until well mixed. (add water if you need) 20151221_1342185. Bring to a boil and add noodles. Cook noodles until done. Finally, add the lemon or lime zest and cilantro serve warm with bread.20151221_141457
