Directions:

  1. In a medium bowl, sift together the flour, baking powder, and salt.

DSC_00972. In the mixing bowl, mix the 1/2 cup of butter for about 2 minutes until it gets smooth. Add the sugar and continue beating until the mixture is light and fluffy about 3 minutes. Add the egg and vanilla beat until well combined.

DSC_01003. Add the flour gradually and mix it until combined.  Remove the dough and separate it into three equal pieces.  Knead your food colouring into each dough. I made red, yellow, and green. It’s great colours for the Holiday. Wrap up each dough with a plastic wrap and chill it for about 30 minutes in the refrigerator.DSC_0101DSC_0103DSC_0105DSC_0107DSC_0109DSC_0116DSC_0120DSC_0126DSC_01294. Place the dough in between two pieces of plastic wrapping and roll it into about 1/8-inch thickness. Repeat this action on each coloured dough.

5. Remove one side of the plastic wrap of the dough and Stack the layers on top of each other. I recommend keeping one side of the wrap on the dough because that wrap is holding the dough together while you transfer. Obviously, you have to remove both sides of the wraps of the middle layer. Very lightly roll the three layers together.

6. You can use the plastic wrapping to roll the dough just like using the towel to making a cake roll. Wrap the roll in plastic wrapping and refrigerate them for 30 minutes to 1 hour. Make sure the rolls are wrapped completely.

7. Spread 1 cup of sprinkles in a shallow rectangular dish. Melt the 1/2 tbsp butter. Remove the dough roll from the fridge and unwrap it very gently.  Using a pastry brush, apply a little butter all around the dough and roll it gently on the sprinkles until it’s completely covered. Wrap dough in plastic wrap again and chill in the refrigerator for about 1 hour.  (If you saving this for a later occasion, You can freeze it and keep it up to 2 months in the freezer).DSC_0146DSC_0151DSC_0160

8. preheat oven to 350 degrees. Line two baking sheets with parchment paper. Once chilled slice the dough with a sharp knife to your desired thickness. Place on prepared baking sheets 1-2 inches apart. Bake for 15-18 or until edges start to turn golden brown. Remove from oven and let cookies remain on the baking sheet for about 5 minutes, then transfer to a wire cooling rack.DSC_0161DSC_0169DSC_0181
