Double Chocolate Cupcake with Cream Cheese Frosting.

Perfect light and fluffy chocolate cupcakes with cream cheese frosting. Sounds great right???  I love it…

These cupcakes are easy to make, soft, and yummy. If you are a chocolate lover like me you will love it. You can eat these for breakfast, dessert, snacks, and tea parties.  Please try to use premium cocoa and chocolate.  Good luck and enjoy 😉DSC_0202

Cupcakes are a great small treat. Topped with frosting or a glaze or even left plain, they’re perfect for satisfying a sweet tooth.

Ingredients:

12- 16 cupcakes

  • 1 cup all-purpose flour, sifted
  • 1/3 cup unsweetened cocoa, sifted
  • 1 tsp baking soda
  • pinch of salt
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 1/4 cup butter, at room temperature
  • 2 eggs
  • 1  1/2 tsp vanilla extract
  • 1/2 cup buttermilk
  • 60 gr dark dark chocolate, chopped
  • powdered sugar for dusting ( if you’re serving without cream cheese frosting just use sifted icing sugar)

For frosting:

  • 8 oz cream cheese, at room temperature
  • 1/2 cup unsalted butter, softened at room temperature
  • 2 cups confectioner’s sugar, sifted
  • 1-2 tbsp whipping cream
  • 1-2 tsp vanilla extract

Directions:

  1. Preheat oven to 350 F
  2. Grease a 12-cup muffin tin or line it with cupcake liners.
  3. In a medium-sized bowl, whisk together the cocoa, flour,  baking soda, and salt for about 30 seconds then set aside.DSC_0095
  4. In a large bowl with a hand-held or stand electric mixer, beat together the butter and granulated sugar on medium speed until light and fluffy. Add eggs one at a time, and vanilla beats well. DSC_0102DSC_0105
  5. Now add  1/3 of the sugar mixture and flour mixture also buttermilk. Mix well. DSC_0109
  6. Fold in chopped chocolate. Spoon batter into prepared muffin cups. DSC_0114DSC_0116
  7. Bake at 350 F for 18 minutes or until the wooden pick inserted in the center comes out clean. DSC_0125
  8. Remove from the pan and cool completely on a wire rack. 
  9. You can eat without cream frosting too. It’s very yummy with coffee and tea.

Make the frosting:

  1.  In a medium bowl using a handheld or stand mixer fitted with a paddle attachment beat the cream cheese and butter together on medium speed until smooth about 2-3  minutes.
  2. Add the confectioner’s sugar little by little and 1 tbsp cream. Beat for 2 -4 minutes. Add the vanilla and more whipping cream if needed.  Beat on high for 1 full minute. Taste the frosting and add a pinch of salt if too sweet. Frost cooled cupcakes immediately before serving. Enjoy these beautiful cupcakes.DSC_0196DSC_0167
