Blueberry Lemon Coffee Cake.

Hello everyone.  Happy spring.

It’s been raining a lot here (Ontario, Canada).  This year spring is coming so late.  In this rainy day just staying home and baking my favorites. This is one of my favorite tea/coffee cake. Very easy to make and so good. You can use frozen blueberries but I like to use fresh ones. Especially around the blueberry season.  Enjoy and if you have any question please let me know.

This blueberry and lemon cake is perfect for tea time lovers!

Lemon blueberries make for such a delicious flavor. 

 

Ingredients: 

  • 1  1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda 
  • pinch of salt
  • 3/4 cup sugar
  • 3 tbsp Turbinado sugar
  • 6 tbsp unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 egg
  • 1 egg white
  • 1 cup buttermilk (you can make homemade buttermilk. 1 cup whole milk+1 tbsp lemon juice)
  • 1/3 cup sour cream
  • 1 tbsp lemon zest
  • 2 cups blueberries

Crumb topping: (optional)

(If you like crumb cake make this crumb. It’s so good)

  • 1/2 cup sugar
  • 1’4 cup flour
  • 3 tbsp melted butter

Instructions:

  1. Preheat oven to 350 F. Spray an 8-inch pan with non-stick spray with flour. 
  2. Prepare crumb topping and set aside. (if you’re using. Optional)
  3. Combine flour, salt, baking powder, and baking soda stirring with a whisk. Sift and set aside.
  4. In your mixing bowl beat with sugar and butter at medium speed about 2 minutes. Add vanilla, egg, egg white, lemon zest, and sour cream beat well.
  5. Add flour mixture and buttermilk alternately to sugar mixture, beginning and ending with flour mixture. Mix after each addition.
  6. Spoon half of the batter into your cake pan. Sprinkle 1 cup of blueberries. Spoon remaining batter over blueberries, and sprinkle evenly with remaining 1 cup blueberries. Now sprinkle Turbinado sugar or crumb topping if you using.
  7. Bake 45-50 minutes or until wooden pick inserted in center comes out clean. Cool in a pan about 10 minutes then remove it and cool completely on wire rack.
