Broccoli cheese stuffed chicken breast.

Tender chicken breasts stuffed with broccoli, cheddar, and colorful yummy veggies. You can put your favorite veggies. All the flavors cook inside the chicken breasts and make the chicken super juicy and flavor-packed. Very easy to make and time saving. You can use frozen or fresh broccoli. But I like to use fresh broccoli florists and with a lot of cheese.

We need just a few ingredients and cast iron.

Easy to make and delicious chicken breast recipe that’s loaded with a cheese and broccoli mixture for a perfect low Carb and tasty meal.

Ingredients:

  • 3,4  large organic chicken breast
  • salt,and freshly ground pepper
  • 1 tsp garlic powder or 3 cloves minced garlic
  • pinch of paprika or cayenne peppers
  • dry basil to taste 
  • about 3/4 cup finely chopped broccoli, organic
  • about 1/2 cup diced green, red yellow bell peppers, organic
  • 3 or 4 organic brown mushrooms chopped
  • about 2 tbsp chopped red onion
  • 1 cup shredded marble cheddar cheese
  • 3 tsp mayonnaise
  • 2-3 tbsp olive oil
  • 1 tbsp garlic butter
  • your favorite salad, or side dish to serve with

I like to serve with steamed rice and fresh salads. 

Directions:

  1. Chop your veggies nice and small so they can all fit inside the chicken breast.
  2. Don’t cut your chicken all the way through, just cut enough to make a pocket. Try to pick large chicken breasts. So you can put all the stuffings.
  3. Try to use iron skillet, it’s the best. If you don’t have this you can sear the chicken in a skillet first, then transfer to an oven safe dish.
  4. You can use asparagus or spinach instead of broccoli.
  5. Season your chicken breasts with salt, pepper, paprika and garlic powder. Use a sharp knife to cut a slice through the middle of the chicken breasts, but not all the way through, creating a pocket for the filling.
  6. Heat a large oven safe skillet  (cast iron would be great), over medium heat and 1 Tbsp olive oil. Stir fry all the chopped veggies season with salt, pepper about 2,3 minutes. Let it cool completely.
  7.  In a bowl combine the fried, cooled veggies and shredded cheese and taste with more salt & pepper if you want and set aside. Now spoon the mixture into each chicken breast evenly. Secure with toothpicks.
  8. Preheat oven to 400 F. 
  9. Heat your cast iron on medium high heat put garlic butter and 1 tbsp olive oil. Sear the chicken for 4 to 5 minutes on each side until golden brown colors. Cover skillet with foil and bake in preheated oven for 12- 15 minutes. Let rest, covered for 5 minutes before enjoying.
  10. Serve with you favorite rice, noodle, and salads.
