Homemade Basic Waffles.

Happy weekend everyone.

It’s Friday evening and kids are having a 1-week spring break starting today. That means the kids are happy and mommy’s going to be very busy πŸ˜‰ During this pandemic time, trying to make them happy and keep them healthy is a bit challenging. We walk, play tennis or play volleyball as much as we can. Luckily our tennis court is open. We can bike around our home. Stay healthy and happy everyone.

Today I’m posting one of my easiest recipes. It’s a homemade basic waffle. Waffles are the ideal breakfast or weeknight dinner. They are not only delicious and also easy to make. You can freeze them after they cooled down. 

A basic waffle batter is usually a simple mix of flour, baking powder, salt, milk, oil, eggs, plus your favorite seasoning. This is the recipe I’ve been using for years. Hope you like it.

Ingredients:

  • 2  1/4 cups of all-purpose flour (you can mix with whole-wheat flour)
  • 1 tbsp cinnamon
  • 2 tsp baking powder
  • pinch of salt
  • 3 tbsp sugar
  • 2 tsp vanilla extract 
  • 2 cups milk
  • 1/2 cup melted butter or oil
  • 2 eggs, separated 
  • cooking spray
  • your choice of syrup and fruit puree,

Directions:

  1. Weigh or lightly spoon flours into dry measuring cups level with a knife. Combine all the dry ingredients in a large bowl and mix well. 
  2. Combine milk, oil or butter, vanilla, and egg yolks, and add to the flour mixture, stirring until smooth. 
  3. Place egg whites in a large bowl and beat with a mixer at high speed until foamy. Now add sugar, beating until a soft peak forms. Gently fold the egg white mixer into the batter. 
  4. Preheat the waffle iron and then coat the iron with cooking spray. Add the batter to your waffle iron and cook them according to your waffle iron’s instructions. Spoon about 1/3 cup of butter peruse. 
  5. Serve with your favorite syrup, fresh fruits, whipped cream, or ice cream.

Note:

  • It’s best to select a waffle iron with a nonstick surface so there is no need to add oil or butter to prevent sticking. 
  • To clean the iron; let the iron cool completely then just wipe it with a damp cloth or paper towel. 
  • You will need a small spatula cooking spray, and measuring cups.
