Meatless Lasagna Cheese Roll-Up.

Happy pasta day everyone.

Do you like any pasta dish? We love pasta dishes like this meatless lasagna cheese roll-up,  Homemade best lasagna, Meatball stuffed jumbo shells, Rigatoni paste pie.

Lasagna cheese roll-ups combine the best of classic lasagna but are much easier to serve, bake faster and can be enjoyed right away. No resting time required! These meatless roll-ups are saucy, cheesy and definitely satisfy the craving for lasagna. My youngest son doesn’t like the original lasagna. That is why I bake this meatless roll-up lasagna for him. He loves it.

Try this recipe and you will make it over and over again.

Ingredients:

  • 1 cup of pasta sauce
  • 2 tbsp tomato paste
  • 1 cup diced tomatoes
  • 1 tsp sugar
  • salt and pepper to taste
  • 1 tsp + 1 tsp Italian seasoning
  • 2 cloves minced garlic
  • 1/2 tsp dry basil
  • 2 bay leaves
  • 2 mushrooms diced
  • 3,4 tbsp chopped green or red sweet  pepper
  • 1/2 small yellow onion, chopped
  • 1 (280 gr) ricotta cheese
  • 1 egg
  • 1 tbsp + 2 tbsp Parmesan cheese
  • 1   1/2 cups shredded mozzarella cheese
  • 1 tbsp olive oil
  • 12-14 Lasagna noodle

To do:

1. For the Sauce: In a large skillet or pot over medium heat saute chopped onion, minced garlic, in 1 tbsp olive oil until they start softening. Add mushroom, peppers and season with salt and pepper. Stir well and cook for about 1, 2 minutes. After that add tomato paste, tomato sauce, crushed tomatoes and stir everything together. Add bay leaves, salt and pepper,  half of the basil also Italian seasoning stir. Cook covered about 30 minutes on low heat. Stir every 15 minutes.

2. preheat oven to 350°F. 

3. Pour the sauce on the bottom of your non-stick baking dish (9 x 12).

4. Cook noodles according to package directions, then drain.  (In a big flat pot put 12-15 cups of water add 1/2 tsp salt. Boil the water and add noodles. While cooking the noodles stir often very gently)

5. Combine ricotta, 1 tbsp Parmesan, egg, salt, black pepper, 1 tsp Italian seasoning, sugar, and basil in a small bowl and mix.

6. Place a wooden board on the counter of your kitchen and layout the lasagna noodle. Make sure noodles are dry. Take a spoonful of ricotta mixture and spread evenly over the noodle. Add some shredded Mozzarella cheese and roll carefully and place seam side down onto the baking dish. Repeat with  remaining noodles.

7. Put foil over the baking dish and bake for 25 minutes on the lower rack. Remove the foil and apply evenly the remaining ricotta mixture and sprinkle with Mozzarella cheese and more Parmesan cheese. Also, sprinkle more basil and 1 tsp Italian seasoning. Bake on upper rack 15 more minutes until cheese melts.

Serve with your favorite salad or garlic bread.
