Hello friends!

It’s a beautiful evening here Oakville ON Canada. I’m sitting outside having a glass of wine and posting my newest recipe. These delicious mini cheesecakes with a crunchy graham cracker crust are very simple and easy to make. Who doesn’t love a good mini dessert? They are rich and creamy. It’s a perfect little treat for any occasion.

Make sure your cream cheese, eggs and sour creams are at room temperature before starting to avoid lumps. Room temperature ingredients will incorporate together so much easier and you’ll end up with nice and smooth cheesecake filling.

Ingredients:

  • 12-14 graham crackers, crushed
  • 4 tbsp unsalted butter, melted
  • pinch of salt
  • 2 blocks of cream cheese softened
  • 2 eggs at room temperature
  • 1/3 cup sour cream at room temperature
  • 1/3 cup sugar
  • 1 1/2 tsp vanilla extract
  • 3/4 cup melted chocolate
  • 1, 2 tbsp whipping cream or coconut oil
  • fruits and sprinkles for decoration

To do:

  1. Preheat the oven at 325F/ 165C. Line a 16 cup muffin tin with paper liners and set aside.
  2. In a large bowl combine crushed crackers with melted butter and salt. Stir well. Press crackers mixture into paper liners and set aside.
  1. In your bowl beat softened cream cheese until light and fluffy about 2 minutes. Add sugar and beat again about 1,2 minutes. Now add your eggs one at a time. Mix well and clean your mixing bowl around. At last add vanilla, sour cream, and salt. Beat on medium speed about 2 minutes. Stir well and clean the bowl around with a spatula.
  2. Now on higher speed mix again about 2 or 3 minutes. The mixture should be thick and fluffy white.
  3. Pour the filling over graham crusts. Drop softly on your counter a few times. Bake on your middle rack for about 20 minutes. Turn off your oven and leave it for about 5 minutes. Now open your oven door slightly about 5 more minutes.
  4. Let it cool about 1-2 hours. When you think it’s ready to decorate then melt your chocolate in a double boiler or in the microwave. Drizzle melted chocolate on the top of your cheesecake and decorate with berries, sprinkles, cookies or just serve it plain. I love to decorate with raspberries or strawberries.
  5. Note: Try not to open the oven door the rush of cold air into the oven will not be good for you cheesecake. Place your ingredients at room temperature about 2 hours before you start. You can replace the graham crackers. Oreo is a very popular addition.
