Spicy Garlic Scapes (garlic stems)

What are garlic scapes???

They are the curly tops or stalks of a garlic plant. They are usually trimmed to help in the growth of a larger garlic bulb. The garlic stem has a hint of garlic flavor, a bit of heat, and some sweetness.  It is perfect with a bowlful of steamy rice. I just love this curly long stems.  If you like spicy food you can add more spice. But this recipe is just right for me.

Have a warm bowl of rice and enjoy this side dish 😉

Ingredients:

  • 0.5 lb  garlic scapes, dry ends trimmed and cut to 2-inch length

  • 6 cups water
  • 1/2 tsp sea salt
  • 1 tbsp Korean red pepper paste ( Gochujang) if you like spicy food you can add 1 more tbsp
  • 1 tbsp rice vinegar
  • 2 tsp soy sauce ( Korean)
  • 2 garlic cloves, gratedDSC_0066
  • 1 tsp toasted sesame seeds

Directions:

  1. Bring water to a boil in a pot big enough to hold 6 cups of water.  Add sea salt and stir to dissolve.  Add garlic scape.  After about 2 minutes, when the color turns bright green and its texture still remains soft-crunchy, remove it from the water.  Rinse in cold water just until garlic scapes cool down.  Set aside.DSC_0069DSC_0078
  2. In the big bowl make the dressing by mixing together red pepper paste, rice vinegar, soy sauce, grated garlic, and toasted sesame seeds.  Toss garlic scape in the dressing.  Taste and adjust the seasoning if you want.   Serve with rice and any dish you like.
