Hello everyone.

I’m posting one of the easiest and simple dinner recipes. Tender, juicy, and deliciously seasoned chicken breasts stuffed with melty cheese and asparagus. These are very easy to prepare and work great for an easy weeknight meal. You can serve with your favourite salad or rice and noodle. I like to serve with a fresh green salad. 

Sense this Coronavirus started feels like every day is the weekend. Everybody is at home and doing all kinds of stuff. I bet mommies are very busy. Cooking, cleaning, teaching, playing with kids, watching a movie with them and I mean very busy. So during this busy time, I have a goal to share a lot more simple and easy dinner recipes. This asparagus stuffed chicken is will be a very simple, and delicious dinner. 

Ingredients:

  • 4 big chicken breasts, organic 
  • 4 thick-sliced mozzarella cheese, 
  • 12 spears of asparagus 
  • salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 onion powder
  • 1/2 tsp paprika
  • 1/2 tsp Italian seasoning
  • 1 tsp dry basil
  • 1 tbsp garlic butter 
  • 2 tbsp olive oil 
  • 1/2 cup Parmesan cheese
  • 1 cup of bread crumbs 
  • 1 cup flour
  • 3 eggs, beaten

  1. To make this dish, we’ll start by butterflying the chicken. It’s a fancy way to say it but we’ll just cut the chicken breast in middle and make a pocket. Season both sides of the breast with salt and freshly ground pepper. 2. Preheat the oven to 350 degrees F.

3. Place bread crumbs and parmesan cheese in a 1st bowl mix well. In 2nd bowl beat the eggs well. In a 3rd bowl stir flour with all the dry ingredients such as Italian seasoning, basil, paprika, garlic powder, onion powder, salt and pepper.

4. Then place the slice of mozzarella on one side of the chicken and lay your 3 spears of asparagus on top. Fold the chicken breast and close with toothpicks.

5. Dip the chicken breast in the flour mixture first then egg mixture at last bread crumbs mixture. Place it on the rack.

6. In a large ovenproof skillet on medium heat coat pan with olive oil and butter cook breast for 3 minutes each side.  You have to be gentle when flipping the chicken breast. Finish off by placing the skillet in the oven and bake about 12-15 minutes.

And that is it. A super easy and super tasty meal is done. Serve with your favourite salad, noodle or steamed rice. These stuffed chicken breasts are very easy to make and so delish.
