Vanilla Cupcakes with Buttercream Frosting.

These delicious vanilla cupcakes are the perfect soft and very easy to make. You can put colors if you want, and any frosting will suit with these cupcakes. I make these very often because they always get a wow reaction from everybody and of course they are delicious. My kids love it. The other day I made multi-color cupcakes. Scroll down and check the pictures. Try to make these with your kids or grandchildren. They will love it. You have to try this vanilla cupcake recipe!

Serving: 12-14 cupcakes.

Ingredients:

– 1 cup granulated sugar
– 1/2 cup unsalted butter, at room temperature
– 2 Eggs
– 2 tsp vanilla extract
– 2 tsp baking powder
– pinch of  salt
– 1 1/3 cups all-purpose flour
– 1/3 cup whole milk

Buttercream frosting:

– 3 cups powdered sugar, sifted 
– 1 cup butter, at room temperature
– 1 tsp vanilla extract
– 2-3 tbsp  whipping cream

Directions:

1. Preheat your oven to 350 degrees. Line your cupcake tin with liners and set aside.

2.  In a mixing bowl fitted with a paddle attachment,  (or in your hand mixing bowl) cream sugar and butter about 2 minutes.  Add the eggs, milk, an vanilla mix together until you get a smooth mixture. Add the dry ingredients and with the speed on low mix together and slowly add the milk and just mix everything to combine.  Do not over mix. Make sure you give everything a good stir with a spatula from the bottom to incorporate any bit that wasn’t mixed. (I made a colorful vanilla cupcake for my kids. If you want to do that divide the batter evenly among 4 small bowls. Dye each bowl of batter a color with specific amounts of food coloring drops. It’s fun to do with your kids )

3.  Pour the batter into your lined cupcake tin, make sure it’s only filled ¾ of the way up because they will rise. Bake for 20 minutes and let cool for about 45 minutes before frosting. DSC_0132DSC_0134DSC_0135

Buttercream frosting:

 4. In a mixing bowl fitted with a paddle attachment,  (or in your hand mixing bowl) cream the butter about 5,6 minutes. Then add the icing sugar little by little. (Sift the icing sugar first)

(This is my secret to make a nice and smooth buttercream)

5. Add vanilla and cream and continue to beat on medium speed for 4-5 minutes adding more cream if needed for desired spreading/piping consistency. I usually add 3 tbsp of whipping cream.

Tips:

Add in color, if desired. I like to use colored gel paste instead of liquid food coloring- then you’re not messing with adding additional liquid to the perfect consistency of the frosting. Gel paste is sold at craft stores and baking supply shops.
