Whole Wheat Blueberry Pancake

Pancakes are the ideal breakfast they are not only delicious but they are also  easy to make and cook quickly.  Drizzle these pancakes with maple syrup or top with a fresh berries.  Some people even put ice cream on the top 😉 I think it’s a great dessert and treat.  I love berry pancakes. You can use strawberries, blueberries, and raspberries too.

Note: How to make a perfect pancakes? Here is my answer. Always pour the wet ingredients into the dry ones to avoid clumps. Stir until the batter is smooth, and use it immediately. If you wait too long it will thicken.  And also cook on the low heat. These pancakes reheat well in the toaster oven , so you can make a big batch and use later.  Good luck and enjoy 😉

Ingredients:

  • 1/2 cup whole wheat flour
  • 1/2 cup all-purpose flour ( or you can use 1 cup whole wheat or 1 cup a.p.flour)20160521_090726
  • 1  1/2 tbsp brown sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • pinch of salt
  • pinch of nutmeg (optional)
  • 3/4 cup blueberry or vanilla organic yogurt
  • 2  1/2 tbsp melted cooled unsalted butter

  • 1 tsp vanilla extract
  • 3 tbsp milk

  • 1 cup blueberries

Directions:

  1. Lightly spoon flours into dry measuring cups level with a knife.  In a medium bowl combine flours and brown sugar, baking powder, baking soda, salt, and nutmeg, stirring well with a whisk. Set aside.
  2. In a small bowl combine yogurt, melted butter, lemon juice, vanilla extract, milk, and eggs. Add to flour mixture stir until smooth. IMG_20160521_125142
  3. Pour about 3 tbsp batter per pancake onto a hot nonstick griddle or nonstick skillet. If you need cooking spray you can use it. Top each pancake with a bluberries. Cook over medium low heat 2 minutes. Carefully turn pancakes over and cook again about 2 minutes. IMG_20160521_125157
  4. Drizzle these pancakes with maple syrup or top with a fresh berries.
