Mixed fruit and mint salad

Juicy fruit salad is the best for anything and anytime. Specially after holiday 😉 This is the simple, easy recipe for any fruit salad. You can add your favorite fruits,  juice, nuts or raisins and dried fruits.  This simple fruit salad can be made with 6 to 8 cups of any of your favorite fruit.  It’s a great breakfast and snack and pairs well as a side with any meal also. Make a colorful one and enjoy 😉

Ingredients:

  • 1 mango peeled, and chopped
  • 2 kiwis, peeled and chopped
  • half dragon fruit, peeled and chopped
  • 1/2 cup chopped pineapple
  • 1/2 cup sliced strawberries
  • 1/2 cup green or red halved grapes
  • half green or red apple, chopped
  • 1/2 cup  each blueberry, raspberry, blackberry
  • 3,4 tbsp pomegranate seeds
  • half lemon juice and zest
  • 2 tbsp honey
  • 1/2 cup orange juice, or pineapple juice, or mango juiceDSC_0099

Make your own giant batch of healthy fruit salad!  I know, sounds too easy right?  That’s because it really is that easy 😉

Directions:

  1. Wash, peel and dice or chop all the fruits and put in a large bowl. DSC_0100DSC_0101
  2. Strip the mint leaves off the stem, tear or chop into smaller pieces.
  3. For the dressing mix lemon juice, lemon zest, mint, honey and juice, in a small bowl. DSC_0103
  4. Pour the dressing over the fruit and stir  gently with a wooden spoon. Serve with fresh mint leaves or keep chilled up to 2 days.
