Egg and Green Peas Salad

Refreshing and delicious is the best way I know to describe this salad. The sweet peas are very good in contrast to the mayonnaise. The boiled egg gives it an added flavor and texture.  Super easy to make and very different taste. It’s perfect salad with any food. Enjoy this beautiful green salad 😉

Ingredients:

  • 4 hard boiled eggs, cooled, peeled, and chopped
  • 1 stalk celery, chopped
  • 2 stalks cilantro leaves, chopped
  • 2 stalks green onions, chopped
  • 1 small avocado, chopped
  • 1 can ( 425 gr) sweet green peas, drained
  • 1 cup mayonnaise
  • pinch of salt
  • 1/4 tsp fresh black ground pepper, (red pepper powder. it’s optional)
  • 1/4 tsp sugarDSC_0028

Mix your mayonnaise mixture like this 😉

Directions:

  1. Open can of peas and drain.
  2. In a small saucepan put eggs and water, pinch of salt. Boil about 8 minutes. Rinse with cold water few times. Let it cool. After cooled peel the eggs and chop it.
  3. Chop the green onions, celery, avocado and cilantro.
  4. In the medium bowl combine the mayonnaise, sugar, ground pepper and salt. Transfer the peas to the bowl with the mayonnaise mixture and then add the egg, green onion, avocado, cilantro and celery. Gently mix the ingredients until it gets fully combined and then cover. Refrigerate for at least 30 minutes  prior to serving.DSC_0025DSC_0034DSC_0045
