Mango and Cherry Tomato Salad

Sweet and fresh mangoes and mint are the perfect combination. You can add avocado  if you like. This salad is very easy to make. Good luck 😉 

Ingredients:

Dressing:

– 1/4 cup of mango or orange juice

– 3 tbsp  extra virgin olive oil

– 1 tbsp lemon juice

– pinch of salt and freshly ground pepper

– 1/2 zest of lemon

Salad:

– 2 cups  ripe mango chunks

– 1 cup cherry  tomatoes cut in half

–  1/4 cup minced red onion

– 2 tbsp minced fresh mint

– 1 avocado ( if you like)

– 3 tbsp chopped cilantro

2.  Whisk the dressing  ingredients together in the bottom of salad bowl.

3. Add ingredients to dressing bowl and toss well. Let sit for 20-30 minutes in the fridge before serving.
